Syncopation is placing accents on the off-beats, or on the weaker parts of the bar, against the strong beats the ear is expecting. The accent lands where the ear does not predict it, and that small surprise is most of what we hear as groove and forward motion. Here is what the strong and weak beats are, the common ways to play against them, and why it sits under funk, disco, reggae, Latin and most dance music.
Plain music theory that works in any DAW, on any instrument, whether you play the part in by hand or program it note by note. Nothing here needs a particular plugin.
Syncopation is putting emphasis on the off-beats, or on the weaker beats of the bar, instead of on the strong beats the ear expects. You either accent a note that falls in a weak spot, or you tie a note across a strong beat so the strong beat itself is silent and the accent lands early or late. In both cases the stress arrives where the listener is not counting, and that mismatch is what gives the music its push.
It helps to hear it against the plain version. Play a note squarely on every beat and the part marches: it is steady, but it does not move. Shift some of those notes just off the beat, or drop a beat and hit the gap next to it instead, and the same notes start to lean and pull. Nothing about the pitches changed. Only where the accents sit in time did, and that is the whole of it.
None of this is a rule you must follow. A part with no syncopation at all can be exactly right, and a part drenched in it can be a mess. Syncopation is one tool for adding motion, and knowing how it works makes it easier to hear why a groove feels stiff or why it swings.
In common time, the four counts of the bar are the strong beats, and the moments between them, the "and" of each count, are the weak off-beats. Count "one and two and three and four and" over a bar of 4/4 and the numbers are the pulse the ear locks onto, while the "and" between each pair is the off-beat that feels lighter and less expected.
There is a further layer inside the numbers themselves. Beat one is the downbeat and the strongest point in the bar, and beat three is the next strongest. Beats two and four are weaker by comparison, which is why the snare so often lands there: a backbeat on two and four is already a mild lean away from the strongest beats. The off-beats, the "ands", are weaker still. So the bar has a rough ladder of stress, from the downbeat at the top down to the off-beats at the bottom.

The exact ladder shifts with the time signature and the style, and it is a tendency rather than a law. But the basic split holds across most Western pop and dance music: the numbered beats are what the ear predicts, and the off-beats are the spaces it does not. Syncopation is simply the art of putting weight on the spaces.
The common ways all come down to one idea: move the accent off the strong beat. You can accent the off-beats directly, leave a rest where a strong beat was expected so the note next to it stands out, tie a note across a strong beat so it starts early and holds through, or push and pull notes slightly ahead of or behind the beat. Each one takes weight off the predictable spot and puts it somewhere the ear is not braced for.

A worked example makes it concrete. Take a plain bass part that plays one note on each of the four beats, right on one, two, three and four. It is solid and completely square. Now move each of those hits to the "and" just after the beat, or drop beat one entirely and start the figure on its off-beat, and play the ands instead of the beats. The pitches are the same notes as before, but the line now anticipates and drives instead of marching. That single move, hitting the ands rather than the beats, is a large part of what makes a bassline feel funky rather than stiff.
Amount is a choice. A single pushed note in an otherwise straight part is a light touch that most listeners feel without noticing. A line where almost every accent sits off the beat is heavy syncopation, the sort funk and disco basslines live on. Neither is more correct; they are different amounts of the same idea, and it is worth trying a part both ways to hear which the song wants.
Syncopation grooves because it plays against expectation. The ear predicts the next strong beat and leans toward it, and when the accent lands somewhere else instead, on an off-beat or a weak beat, that small gap between what was predicted and what arrived reads as energy. The body fills the missing strong beat in on its own, which is a lot of why syncopated music makes people want to move.
This is why it sits at the centre of so many styles. Funk builds its bass and guitar out of tight, off-beat notes locked to the drums. Disco and much of house music drive forward on off-beat hi-hats and bass that answers the four-on-the-floor kick between the beats. Reggae puts the whole chord on the off-beat, the skank, and leaves the downbeat to the bass and drum. Latin music runs on repeating syncopated patterns like the clave. In each case the plain pulse is there underneath, and the parts on top lean off it.
It is possible to overdo it. If nothing ever lands on a strong beat, the ear loses the pulse and the groove turns to mush rather than tightening. The strongest grooves usually keep a clear anchor somewhere, often the kick on the downbeat, and let the other parts play against that steady reference. Syncopation works because there is a straight beat to push against, so it tends to hit hardest when something in the arrangement is still holding the plain time.
Everything above is something you can do by hand, and it is worth learning to feel where the off-beats are and to place accents there on purpose. The slow part is the doing: nudging each hit off the beat, tying notes across the strong beats, and keeping the whole thing locked to the groove while it stays as notes you can still edit.
